Should I put the plastic camera guard on it that came with the unit when traveling (with it in the case of course).

Yes, you should always attach the gimbal lock before transporting your Phantom.

Anytime you're not using your Phantom you should attach the plastic gimbal lock. Prevent any jarring from causing damage to the gimbal. That part seems to be very susceptible to damage and misalignment issues.
