If I wanted to include some time-lapse frottage in a video would I just shoot what I wanted and speed it up when I edit ?

Makes for a bigger file and may be a limit to how much you can speed up. Could also try just deleting frames. For example, if you keep frame 1, deleted 2-10, and repeat for the length of the segment you would have a 10X compression. DO the same thing with a sequence of stills taken over a time period and inserted in the video. What editing tools are you using?
