Yes .. DJI use Google maps on Android devices and Apple maps on Apple devices.

Must be a device connected to the Internet? Either that, or even an iPad without connecting to the Internet at the moment?

The maps come from the internet but you can cache the maps at home before you fly.

Yes you can see maps anywhere, however if you want to see geo no fly stuff you have to be connected to your drone before the circles are visible and overlaid on the map.
