I gather I can not shoot still images while I am recording video with the P3P? Is that correct?
Nope. You can only do one at a time.

Yes that is correct. I was not happy to also find this out. I thought the Phantom used the same sensor as the GoPro which does have that ability. I guess that DJI decided to disable that ability. You can use frames from the video, but they don't look good and are not RAW. It works in a pinch.

I'll take better picture using natural sunlight tomorrow
Especially if you shoot video at 4K, screengrabs are quite acceptable - though not as good as RAWs.
Here is one. Actually I think they are pretty close to the JPGs from it.
