Does any one have a good altitude they fly when mapping golf courses.
Also would it be better do the whole course in one map or each whole by it self. Thanks for any help

This all depends on the end-game. If they are looking for a hole-by-hole fly by you'll have to do each one. If they simply want an overview you can do the whole course in one map.

I've only shot individual holes (signature holes) of a golf course so that's my only experience shooting on a golf course.

If you are shooting NDVI, it's most likely that the client would want the whole course in one rather than lots of pieces.
But ask them as it's what they want that's important.
Height will depend on the required detail level.
For orthophotos using the regular camera, you get about 2 inches/pixel resolution at an altitude of 400 feet.
