How do I access my iCloud where the flights are synced to?
I've searched everywhere but I must be missing it somewhere.
I assume I can also change my profile there.

I don't know what you mean by "iCloud", but if you're referring to the DJI profile, you can do that in the app by clicking User Center, or logging into the DJI website.

This is where I'm puzzled.

I've had an email from DJI asking me to update my iCloud profile.

They say to go to Profile >>Product Profile and fill in my details but I can't find this anywhere

Try to use the the DJI Pilot App on the Iphone or Ipad! There you can edit your profile.

The Flight Record sync does not use iCloud but rather DJI's own cloud service.
