How is LOG better than default style?

I understand that log enables you to do more with the image than the default none style. But can someone explain in what way is it better? And for hobbiests that just want to punch up the picture a little.. Does LOG really offer a vast improvement?

I'm trying to decide which I should shoot in.. I take a lot of videos and sometimes edit them. But mostly I view them as they are from the camera.
