My horizon is not straight. Gimbal problem? How do I fix it?

Temporarily you can adjust by adjusting the roll in DJI Go app. To have perm fix, you need to open the back cover of the roll motor and adjust the motor shaft horizontally. There are YouTube videos for that.

While flying, press and hold the C2 button and—while continuing to press the button—turn the gimbal dial to adjust the horizon level. You'll see guide lines on the display to help you level the gimbal. (caveat: This works on a P4, not sure if it works on any previous model)
