Quick question - My P3S is linked to my phone, but I want to connect it to a tablet - will all my flight logs etc be on the new device when I connect it? And how do I connect a new device to the P3S?

No, but you can copy them to your new device. To do so, sync your flight logs in DJI GO on your phone. Then, sync your flight logs in DJI GO on your tablet.

And how do I connect a new device to the P3S?

Install DJI GO, log into your DJI account if prompted, and fly like you normally do.
