What is your opinion on this set-up for the Phantom? I appreciate your opinion.

OK, 1000mW is way more than you need at 1.3GHz unless you're going for extremely long range. Consider 200 to 600mW 5.8GHz gear as it's cheaper and lighter. Also, skew-planar antennas will be much smaller due to the shorter wavelength at 5.8GHz.
What is the 1000mAh 3S battery for? If it's to power the FPV gear then lose it. The extra weight isn't worth it and will reduce your flight time significantly. Power the FPV gear from the Phantom's aux power cable.
Also, you have two GoPro AV cables in your list.
