Can someone please tell me how this exposure thing works on the camera?

Do I hit the + and it lightens the pics?
 
It might, overall at least if you click on a darker area. This tool will meter the expose weighting around the area you click on. For example, if the sky is important click there and you may find the landscape is dark but the detail in the sky will be maintained (no blown highlights).

It's a spot metering feature.
Without it, the camera will meter across the average of the scene.
But if you have a high contrast scene you can use spot metering to tell the camera to meter on just the spot you choose rather than the whole scene.

just tap different areas of the screen and you will see the image brighten or darken , once you get an image you like you can lock those settings by tapping AE LOCK ( hard to do , ae lock is small on the screen ) , changing between camera and video you will have to set AE LOCK again , starting and stopping recordings you will have to set AE LOCK again.
