Course Lock practical use

I've seen some amazing pilots out there that film from a moving boat or vehicle. I was wondering if this only possible because of Course Lock?

I'm particularly interested in how a footage like this can be done (see below)? The camera is pointed perfectly to the target. It's hard for me to imagine without turning on IOC.

Using CL and even HL can be like using a dolly and track for a regular camera rig, and that's often necessary (and even a 3-axis gimbal) for the more complex/stunning shots.
 
nice videos!

I can't really tell if the boat-video stuff was shot with CL, but definitely seemed like the guy knew how to fly his Phantom well!

I fly FPV 90% of the time, so not sure if CL would throw me off or not if I tried using it while shooting.
