Here are two inexpensive ways to mount a mini tablet I found on YouTube. I've tried both ways but prefer the first method - which I am currently using with my Samsung Galaxy Tab Pro 8.4 tablet. Works perfectly. Easy on and off. (One tip.. I didn't glue the plate to the spacer. I screwed the plate to the spacer using the two plate screw holes.)

This is the technique I used. I happened to have a 1/4" thick rectangular piece of plexiglass that I used for the spacer. (You need the spacer so the plastic jaws have room to grab onto the plastic outlet cover or switch plate.)
I use a cheap ($33) iRulu 7" tablet that I mount right to the transmitter. All I did was cut a strip of Plexiglas about 4" long and 1" wide and used a heat gun to bend the ends over a piece of tubing to make it "S" shaped. It fits great using the phone holder on the transmitter and the tablet weight is not excessive.
