When calibrating the compass, how many turns should I do for both the horizontal and vertical steps?

1 complete turn of each should do it.

You only need to turn once. But, I sometimes have to turn a bit past a full rotation.

Agree. slightly past full rotation. If you watch the lights, they will change.

The app tells you if you have turned far enough.

Just check the P3 lights and they will change color when ready.. We all spin at different speeds so checking the lights is the best bet
