I have been trying my P3Pro as a handheld camera and it works well, however, I can't see what I'm filming which is a pain in the butt. Is it possible to connect a phone/tablet direct to the copter (via the mini usb port?) and use the app to film without using the bulky RC.? I have printed a 3D handle and it works well and have worked out how I could mount my ipad mini on the handle, but can it actually work like that?

No.

Lightbridge requires all components to work in conjunction with one another. So you can't remove one without the other.
You can fly without the app, but then you would lose 3/4 of the experience.
Just use a harness, and carry thee cumbersome load with you. ;-)

Or have two operators, one for the P3 and one for the controller-- really works quite well this way.
