1080i/60 or 720p/60?

The i in 1080i stands for interlaced, vs p which stands for progressive. The interlaced only scans every other line in a frame, so it is only half the resolution. It's a format used for old tube type TVs. You want progressive because it scans every line per frame and that's what flat screens and computer screens use.

Your only real choice is 1080p at 30 fps or 720p at 60 fps. Try them both and see which you prefer. For your issue, I'm guessing you'll like 720p/60, but maybe you should just slow down your pans :)
