I think a lot depends on the editing program you use - although you record in 4K - many editors will not actually work 4K and downgrade it in the processing to display for you to edit.
I know the snapshots I take out of my videos are good enough for the videos ad Youtube - but certainly not up...
It rides lopsided actually - so needs trim plates fitted to transom. That video is on 2S .. I've finally got her to run with 3S by separating the water cooling of ESC from motor into two systems.
But I'm glad to see OP got his nice boat fixed.
A good seal is door foam draft sealer strip. Its self adhesive and easily compressed as the lid goes down.
In the old days - we used 'clear sandwich boxes' with press on sealing lids.

Any ideas how water's getting in ? My boats - I always do a test in the 'bath' first ... with lid OFF !

If a DJI (P3) battery is left too long - it can self discharge slowly to a level that the board shuts off and the power button basically does not switch it on correctly. Placing on charger does not correct it either.
Therefore the following is the way to possibly resurrect...
I have one P3 battery that is a tight fit because of slight swelling and another that sometimes has a small cell deviation.
I just monitor them - but both still fly same and no problems.
The subject of adjusting camera settings ... its all out of my league as an 'instamatic camera user' ... I have a DSLR - but like many of the functions on my RC tx's - hardly use the fancier settings ...
My adjustments on my P3P boil down to filter ON or OFF ... and watch the screen on my...
As I said - I am no camera buff and said it tongue in cheek ... what I posted is what effect I see in my videos with / without ...
Right or wrong reason ... I'm not really fussed ..
