What media player are you trying to play it with? My 2016 Macbook Pro is only a basic 13" version and that plays 4K just fine with Quicktime but VLC player is just a choppy mess :)

If you want more brittle props then go for it ;) The stock ones can bend and take a few chips and scuffs to the edges and are just about still usuable,you clip a carbon reinforced one just right and it will snap.

Have you tried recalibrating the controller in the first instance? Unlikely but a possibility is you might have changed "modes" on the controller somehow. Mode 2 operation is usually the "norm" I believe for out of the box Phantoms but you may have changed it to mode 1 without realising although...

The only reason I did the mod was due to the interference I was getting. For some reason as well the interference on the Gopro 4 is way worse than it was on the Gopro 3+

Leave those plastic pins out altogether. On mind I have a couple of cable ties loosely through the front two dampers. Your gimbal is probably going bonkers cause there is no Gopro attached,it is expecting the weight to be more than it is and it cant balance without the Gopro attached.
