Just because you see drones flying there doesn't mean they are doing it legally. All of Santorini is a no fly zone. See this app (Drone Aware - GR). These are the regulations in Greece without authorization (http://www.hcaa.gr/en/HCAA_UAS_FLT_request_editable.pdf). Fly at your own risk...
