You really shouldn't need to worry too much about being dead on straight. If you just push your stick to the right it should go in a perfectly straight line if you have it in p mode.

You can record video when you fly in a straight line with the drone aimed toward the building, and then put that video into Microsoft image composite editor, and it will stitch the images together giving you the long panorama photo.

Try changing your playback resolution to 1/2 or 1/4. (It's above the volume indicator on the right side of the screen) That should make it less laggy. More ram and putting the files on the SSD wouldn't hurt either.

I recorded this using using my Phantom 3 Standard. I was really close to an airport, so I kept my drone pretty low. I'm pretty happy with how this video came out. I wish I could have flown more and got some more interesting shots, but I didn't have much time to fly.

You're probably just seeing it correcting itself to stay in the same position. It's completely normal in hover if it's tilted if it's windy.
