Slugger - Your source is relatively low definition. The composite video out of the Hero 2 is essentially standard definition. Remember VHS tape players with the composite out? That's what you are starting with. Granted it is a pretty good composite video signal but still limited to 300ish...
Double check that when you put the top back on the shell that you didn't get it rotated 90 deg.
Assuming the top is on correctly, check that the motors are indeed rotating in the correct direction for their position.
I would think the motors would be recoverable. Take them apart and pop out the bearings. Flush out the windings with electric motor cleaner. Get replacement bearings. Reassemble and test.
I think that right there tells you that either your props aren't actually balanced or you have one or more motors several out of balance.
I don't see any more jello with my Hero 3 than I do with my Hero 2.

The acorn nuts that come with it should be metal - not plastic.
You want to check that they are secure before each flight.
You can replace them with nylock nuts but you will want to find low profile ones so that the locking section is fully engaged when snugged down.
