Like an idiot, I was plugged into the USB on the gimbal and not the USB on the helicopter. Now I connect no problem.

Without FPV it would be IMHO impossible to capture anything specific - especially something small like a guy on a bike. You could probably pull off a landscape okay, but you can't follow a guy on a bike. The Phantom won't hold that hc v750 but DJI sells larger copters that will.
