So here it is a year later. I finally gave up and bought a Mavic Pro and occasionally will fly my P3P with a Samsung tablet. Did anyone ever find a fix for iOS devices?
Received an email from DJI support today. They acknowledged the issues with iOS 11.2.x for some users. I was assured they have programmers busy on a GO and GO4 update but no ETA on the delivery.
Anyone still thinking there is not an issue with 11.2.x. You should go read the thread on DJI Forum. They've posted 11.2 as an official fix but the responses show otherwise.

It’s a few months later and I thought I would update. Sent the ESC back to the seller, bought another one from a different vendor and it works great. I’m thinking there was something funky with the first one. Matched all wire for wire so I think the board was just bad.
Yes, it is very strange. I tested it on 3 different devices (kept one at pre 11.2) and in every case the 11.2 update caused the app to to into timeout errors

I just confirmed with Apple Support that you can't roll back from ios 11.2.1 to an earlier version so I'm screwed until DJI comes up with a patch. rynatrax, let me know as soon as you can try yours out to see if you get control. I was getting telemetry, just lost the programming features...
